Chick Flicks and Chocolate


My idea of Chick Flicks and Chocolate might be different from the 'norm' but I love it!

Firstly, how good is being alone sometimes with a good classic Chick Flick? My current favourites to watch are The Sweetest Thing (pictured above), Bridesmaids, Pitch Perfect, The Devil Wears Prada and Sister Act. I am one of those boring people who can happily watch the same movie many times. My list of those such movies includes Crocodile Dundee 1 & 2 (at least 100 times and I know it word for word.... please don't judge me if it isn't already too late!), TED, Hook, The Lion King, Alladin, Ace Ventura and The Mask.

Instead of sinking into the couch with a block of Cadbury these days, I prefer to be productive with my time and create some yummy goodies in the kitchen at the same time. Why not?! Plus, healthy raw chocolates and bliss balls keep in the freezer for up to 3 months, so there is no need for late night trips to the shops to get your chocolate fixes in case you're having a lazy one on the couch. It is all right there for you at home!

If I am going to be completely honest, spending time in the kitchen for me is a bit of an obsession. A compulsion that is driven from a love of creating. As a self confessed chocoholic, I love that these days there are so many healthier options to eating sweets than just grabbing a chocolate bar.

Let me share my two favourite basic mini balls recipes. They are quick and easy and made with the same base, so once you have blitzed up your dates, coconut and cashews then you are good to go. These are bite sized balls and designed to just pop into your mouth in one go. They should be rolled into balls just over double the size of a Jaffa/Malteser.

You either like Choc Mint and Jaffa or you don't, so I really hope you love at least one!

The base for both balls is:

1 cup desiccated coconut

1 cup soaked pitted dates (soak in hot water for a minute or so, drain and pat dry)

1 cup raw cashews

Blitz 1/2 cup of each together in your Thermomix or food processor, empty into a mixing bowl and repeat.

Next, add in 50 grams of chopped dark chocolate (I use at least 85% cocoa) and a heaped tablespoon of rice malt syrup and mix well.

For the Choc Mint Balls you will also need to add in 2 tablespoons of raw cacao powder (or cocoa powder will do if that is all you have) plus a good 5 drops of Young Living Peppermint Essential Oil. At this point THE MOST IMPORTANT JOB is to taste test once it is all mixed in. If it is not quite minty enough then it is time to add another drop, taste, and then another if required. Peppermint is super potent. One drop in one litre of water will really blow your hair back!!

For the Jaffa Balls, you need to add in 1 tablespoon of turmeric powder, the grated rind of one large orange and a good 6-8 drops of Young Living Tangerine or Orange Essential Oil to give it a really beautiful sweetness as well as that good orange punch. Do not forget to taste test in the process! What I love and what you love are possibly two different things, so make it suitable for YOUR tastebuds.

To make sure your mix is ready to roll, pinch some together between your fingertips and it should stick together. Everybody's food processor is different, as is the ingredient source, so if it is too dry, please just add more rice malt syrup.

To roll into your mini balls, spoon a heaped teaspoon of mixture into the palm of your hand, squeeze together as you move it around and then gently roll into balls. Place onto a baking tray lined with baking paper and freeze.

I usually melt some super dark chocolate while balls are setting and then pull them out of the freezer and cover with a light drizzle of chocolate and freeze to set. Not necessary but super decadent!

To store in the freezer I place in either old zip lock bags or in an airtight container lined with baking paper.
