All the fudge please!

Do you love fudge? I do. Like crazily love fudge.

I used to love the crumbly sugary fudge my Mum always made with sugar and butter and cocoa (I think).

Then I went through a stage of loving the more soft and chewy style fudges so decided I was going to duplicate them without the processed and heavily refined ingredients.

It is SO easy! Providing you like peanuts, almonds, cashews, sesame seeds, and well anything that makes some sort of buttery paste, then these are for you.

All you need is 5 ingredients. Even better!

Cacao butter, check. Peanut Butter, check. Rice malt syrup, check. Sea salt, check. Vanilla extract, check. Want a chocolate fudge? Then make sure you have cacao in your cupboard too.

The formula is equal cups of the big stuff and a dash of vanilla and a sprinkle of sea salt.

Yep. That’s it!

So, for the above check list for Peanut Butter fudges you require a cup each of peanut butter, cacao butter and rice malt syrup and a dash of vanilla and a sprinkle of sea salt. Pop it in your double boiler until it is melted and well mixed and ......done!! 

I use ice cube trays with the little silicone pop outs at the bottom.

I also pop in the freezer for an hour to set, pop them out and then store in an airtight container lined with baking paper in the fridge. 

If you want your fudges more soft then add an extra 1/2 cup of peanut butter and a splash more rice malt syrup. Or, your could back off the cacao butter by 1/3.

If you want a sesame version then sub tahini. Tahini is quite strong so I usually only go 2/3 cup and add sesame seeds in too.

Easy huh. Cashew butter is nice too as is the ABC (almonds, Brazil nuts, cashews).
