  5 cups of roasted and salted peanuts

  4 cups of chopped pitted dates

  100g block finely chopped dark chocolate (I love 85% Lindt)

  3⁄4 cup melted coconut oil

  Add a pinch extra of sea salt if your peanuts aren’t salty enough (optional)


  1. Blitz half the peanuts and half the dates together in your food processor for a good 30 seconds. This will make a reasonably fine crumb with a few slight chunks, which is what you're after.

  2. Remove to a large mixing bowl.

  3. Blitz the other half of the dates and peanuts the same and then also

  4. remove into the mixing bowl.

  5. If you have a small or not so powerful food processor you might need to reduce to 4 batches instead of 2, to get the fine crumb.

  6. Stir in the shaved chocolate well and then LASTLY stir in the coconut oil. Ensure you have mixed it in really well until you see no ‘dry’ ingredients left.

  7. Line a slice tray with good greaseproof paper and the pour slice into tray. Press down well with your hands or the back of a large spoon until pressed in super firm.

  8. Sprinkle with chopped nuts or coconut.

  9. Set in freezer (30-45 minutes) or fridge (60+ minutes) and chop once set. I store mine in an airtight container lined with baking paper in the freezer.
